I am Leonardo and, together with my family, I raise dairy cows following a compatible development model for the Alpine Mountain context, in order to create a sustainable and durable animal husbandry. I think animals are meant to stay in a meadow because they need sun, grass, and water. Therefore, I leave the cows free to graze in the open-air night and day in summer and as much as possible during the other seasons.
My priorities are respect for nature and animal welfare, these are the magic potion for producing tasty and quality cheeses.
I use the method of raw milk processing which, despite needing continuous checks to ensure the authenticity of the raw material, allows to create products with a unique taste and highest quality because it maintains the scents and aromas of grass and hay, it is also rich in vitamins, folic acid, calcium, iron, proteins and simple sugars.
